Rice noodle rolls can be quite bland on their own, that’s why they are usually served with soy sauce.

This is why my favorite way to enjoy them is to smother them in XO Sauce.

The XO sauce elevates the rice noodle rolls with a big boost in flavor and a hint of spice.

XO sauce is a mildly spicy condiment developed in Hong Kong. It is made from dried scallops, shrimps, chili peppers, onions, and garlic.
