Ingredients

  • 6 Extra Large Eggs Beaten
  • 1 1/2 Cups Chinese Chives Diced
  • 1 Tsp Salt
  • 1/4 Tsp White Pepper
  • 1 1/2 Tbsp Oil

Instructions

  • Beat the eggs and add the salt, combine well.
  • Rinse and pat dry the chives with paper towels.
  • Diced the chives to 1.5 cm pieces and add them to the egg mixture.
  • Heat oil in a non-stick pan to medium-high.
  • Add egg mixture and immediately reduce heat to medium-low.
  • When the egg mixture begins to set, gently scramble the center.
  • After 3 minutes, or when the omelet base is set, flip it over.
  • Cook for another 3 minutes or until the base is set.
  • Cut into wedges and serve hot.

Notes

1. Fresh chives are bright green, they have an onion-like smell, and the stalks feel firm when held upright. Discard limp wilted stalks before using.
2. Remove the bottom part and the tapering ends of the chives before dicing.
3. Chives cook quickly, and dicing them into medium size pieces gives a good crunch and texture to the omelet.

Hi ! Thanks for sharing this recipe. As a second generation Asian, I wasn’t able to inherit the recipe from my Japanese mom before she passed away. This brings her memories back to life to me.
