Bring 2 cups of water to the boil.
In the mean time, finely diced French green beans.
Blanch diced beans in boiling water for 40 seconds.
Remove beans and put them into a bowl of cold water, then drain.
Mix cornstarch with water to form a soft paste.
Beat eggs, add salt, pepper, cornstarch and beat well.
Add cooled diced beans to egg mixture and stir.
Add oil into frying pan and bring to medium high.
Add egg mixture, reduce heat to medium, and cook for 2 minutes.
When egg mixture is slightly golden on the outside, turn and cook the other side for a further 3 minutes.
