Ingredients
  

  • 475 Grams Lean Minced Beef
  • 5 Cups Day Old Rice
  • 3 Eggs Beaten
  • 2 Green Onions Chopped
  • 3 Cups Shredded Iceberg Lettuce
  • 3 Tbsp Oil
  • 2 Tsp Salt
  • 1 Tbsp Maggi Seasoning Sauce
  • 3/4 Cup Water
  • 2 Garlic Cloves Minced

The Marinade

  • 1/2 Tsp Sugar
  • 1/2 Tsp White Pepper
  • 1 Tbsp Cornstarch
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Oyster Sauce
  • 2 Tbsp Water

Instructions
 

  • Add the combined marinade to the beef and mix well.
  • Heat the pan to medium-hot and add the rice, stir till the rice loosens up, about 2 minutes.
  • Make a well in the rice and add 2 tbsp oil, when the oil is hot add the eggs.
  • When the eggs begin to set stir the rice briskly into the egg mixture, break up any large pieces of egg with the spatula, and continue for about 3 minutes or until fragrant.
  • Add 1 tsp salt, mix well and remove rice to a dish.
  • Heat 1 tbsp oil in the same pan to medium-high, add the beef, spread it out evenly in the pan, and let it cook for 1 minute.
  • Turn beef over and cook for another minute, or until good caramelization is formed.
  • Add the minced garlic and stir fry briskly to break up the beef.
  • Add 3/4 cup water, mix well, turn heat to medium, cover the pan and cook for 5 minutes.
  • Remove the lid, turn heat up to high, return the rice to the pan and stir briskly for 2 minutes.
  • Add Maggi sauce evenly into the rice and combine well.
  • Add the shredded lettuce and green onions, mix well and serve.

Notes

1. The rice needs to be at room temperature and loosen up before frying. Adding rice to the oil sometimes makes the rice stick together. Heating the rice in a dry pan helps to loosen the rice and prevents the rice from sticking together. A non-stick pan is preferred for doing this.
2. Caramelizing the beef produces a nutty rich flavor.
3. Maggi Seasoning Sauce has a deeper and richer flavor than soy sauce, but it can be replaced with soy sauce if preferred.
4. Fresh crunchy Iceberg lettuce provides a good balance to this savory dish. Alternatively, frozen peas or mixed vegetables can be used too. Just heat them first and drain well before adding to the rice.
