3. Use a 10-inch frying pan to produce a thicker omelet that has a slightly crispy crust but still fluffy on the inside. This consistency is harder to achieve when using a large frying pan because the egg mixture will spread out too much and the omelet will be thin.

Ingredients
  

  • 3 Eggs Beaten
  • 170 grams French Green Beans
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tsp Cornstarch
  • 1 tsp Water
  • 2 tbsp oil

Instructions
 

  • Bring 2 cups of water to the boil.
  • In the mean time, finely diced French green beans.
  • Blanch diced beans in boiling water for 40 seconds.
  • Remove beans and put them into a bowl of cold water, then drain.
  • Mix cornstarch with water to form a soft paste.
  • Beat eggs, add salt, pepper, cornstarch and beat well.
  • Add cooled diced beans to egg mixture and stir.
  • Add oil into frying pan and bring to medium high.
  • Add egg mixture, reduce heat to medium, and cook for 2 minutes.
  • When egg mixture is slightly golden on the outside, turn and cook the other side for a further 3 minutes.
